When I was a kid in elementary school, I would look forward to my birthday so I could take cupcakes to school for my friends. I swore my mom baked the best ones. Since we aren't baking cupcakes (yet), we came up with a cookie version of a yummy cupcake in order to celebrate my mom's birthday.
